Apple Pie


I love making Apple Pies this time of year.  Apples are plentiful at the market and at their peak for juicyness.  

This is my favorite recipe.  



Apple Pie Filling

1 cup water
1Tbsp. lemon juice
1 cup sugar
1/2 teas. cinnamon
1/4 teas. nutmeg
1/4 teas. ground clove
1/3 cup cornstarch
1/2 teas. vanilla
3 1/2 cups chopped apples
2 piecrusts  

Bake one piecrust for 10 minutes in 375 degree oven until slightly brown.  

Combine first 7 ingredients in saucepan.  Bring to a boil while stirring constantly.  Boil for 2-3 minutes until thickened.  Add apples and vanilla.    Let cool slightly and add to prepared pie crust.   Cover with second piecrust and poke a few vent holes.   Bake at 375 degrees for 20-25 minutes. 

Let cool before cutting.  We like ours with some vanilla ice cream on top.
