I made this Minestrone Soup for Super Bowl Sunday. I often make soup on Sundays since it's easy to throw things in the crock pot and forget them while we are running errands or working around the house then come dinner time we have a nice hot soup.
We were all going in different directions early Sunday afternoon. Girls were getting pedicures. The boys were working in the yard and going to the batting cages. Everyone was in and out at different times but we each found some time to get a bowl of this soup. I had some fresh rolls too since we like dunking.
This soup will be great again tomorrow for taking to work for lunch. It also freezes well.
Super Bowl Soup
4 cups chicken broth
2 -14.5 oz can diced tomatoes, Italian blend
1 lb. potatoes, peeled and diced
2 medium zucchini, quartered and sliced
19 oz can cannellini beans, rinsed and drained
1 medium leek, chopped (light green and white part)
2 green onions, chopped
1/2 cup chopped broccoli or broccoli slaw
1 cup diced carrot
2 ribs celery, chopped
1/2 tsp. black pepper
1/2 tsp. salt to taste
1/2 tsp. garlic powder
1/2 tsp. marjoram or basil
1 1/2 cup cooked pasta
Combine all ingredients in slow cooker except pasta. Cook on low 6 hours. When all vegetables are softened, add pasta. Serve immediately. Top with Parmesan cheese.
